Hi! I have looked through a ton of reviews and one said you can order refills on apps/entrees, but no other reviews mention this.

Anyone know for sure if it's one serving only or all-you-can-eat?

The one serving is more than enough for us. They start you with a pastry basket that they will refill, and the entrees are good size. We have been offered an extra entree but we turned it down since we couldn't finish our first. The desserts are a platter which is family style. I think they are flexible, but it's definitely worth going. Enjoy!
 
I don't know officially, but unofficially when my aunt and I had brunch there the waiter ended up bringing us three entrees to share because we couldn't decide. It really seemed like they would bring anything you wanted.

I did the same exact thing! I found a review for it on a blog called "Mouse On The Mind" dated May 13, 2016. Here's what they said:

"At the table, we were greeted by Maura, our amazing, totally game, completely fun server. She brought us some pastries, butter and jelly to start the meal, and she quickly explained how things work. Pay close attention here, because this is going to blow your mind: The $69 price tag includes unlimited everything. It’s cruise-style dining, meaning they’ll keep the mimosas coming … and if you’ve got a powerful hunger, they’ll keep the appetizers and entrees coming, as well. The only restriction was the Signature Bloody Mary–every guest was entitled to only one of these monsters, which frankly contained more seafood than the buffet at Cape May Cafe."

and this review from a blog called "Disney In Your Day" dated January 13 2017:

"We had a fabulous server named Jason who was very knowledgeable and passionate. He explained everything to us and also told us that the food basically works like the cruise – if you wanted to try more than one thing he was happy to bring both. I thought they might be smaller portions but he brought a full size version of everything we asked for!"

So it seems like the servers in these two reviews informed the guests they could have more than 1 entree. I don't think they advertise it's AYCTE, and none of the "big" reviews (DIS, EasyWDW) mentioned it because I don't think they know to ask?
 

I thought Mimosas were limited.
According to a reviewer named Josh at easywdw:

"The meal begins with “Prosecco, Mimosa, or a Signature Bloody Mary.” I’d suggest going with the Bloody Mary as you can switch to bottomless mimosas or prosecco after finishing it. Or if you don’t like spicy tomato juice and vodka, you can go straight to the sparkly."
 
I must be thinking of the Wave or another restaurant.

No, at Narcoosee I drank the raspberry beer (but they don't have it any more).
 
We just tried to make an adr for this on Jan 28th and it only allowed booking thru "Jan 27". Is this ending? Does anyone know?

Also, can you get 1/2 orders so we can try more things?

I just tried to book for January 28 and was allowed to do so, so maybe you should retry? My understanding is that you are not limited to just one entree per person, but can order multiple entrees. That's my plan for our reservation in early November, since there are several entrees I'd like to try (though the pending menu updates could change that). And of course, the sushi and other stuff is all you can eat buffet style. So I don't think you need to get 1/2 orders, but just order what you want.
