A specialty of the Asturias region, morcilla sausage has a mild, nutty flavor. This makes it my choice for use in Sevillas Fabada Asturiana stew; its also great for other cocidos (stews). It can be boiled or fried, dried or smoked, eaten cold or hot, and goes best with a wide variety of vegetables, making it also suitable for stuffing bell peppers or cabbage leaves. For a tasty dish, slice it into chunks on the diagonal and sauté it with sliced chorizo, red onions and a dash of brandy.

Yes Belle, that's it. I'ts main ingredient is blood (it's also called "blood sausage"), and believe me, it does not have a nutty flavor.
I copied this from another site: "The blood of the pig is drained immediately after slaughter (sometimes even while the heart is still pumping) and added to green onion, garlic and oregano which has been fried in lard. The blood curdles and is sautéed until the mixture turns brown and thickens, producing a very rich pudding."
