Can someone please explain this to me. Is the dining package for the number of days that you are booked in the hotel? We are planning on staying for 8 nights (which would be 9 days) in November. If we get the dining package would it be for 9 days?

It would be for 8 nights.
I just emailed WDW not to long ago with that question. Because of check in and check out times, they go by how many nights you will be there.
