If you don't get the hopper option on your tickets can you use up one day to go to MK and then on the same day, that evening say, go over to Epcot and use up another day. I realize that you cannot "hop" per se, but can I "hop" if I use up another "day" on my ticket?

No, you can't, the ticket readers will only allow the non-hoping tickets to be used at one park in a business day at WDW.
