lactose intolerant......I try to do special things for him at Thanksgiving and xmas.....he does not ask for anything special but I try......I always make an extra piece of stuffing in aluminum foil so his is not touching the turkey......I make him a baked potato.......I always have a salad and like four or five veggies......(did that before he came into the family) I try to please everyones tastes.....I have tried a few ways of making a meatfree gravy.........Now I would like to do something else for him......does anyone have any ideas......would appreciate it
 
Can I ask a couple questions first? Are you looking to replace your protein source (turkey) or just ANY ideas? Since you already make a variety of veggies, you're not just looking for more veggie casserole ideas, right? Does he eat fish? What about recipes using bouillon? Does he eat those - or NO meat products?

Are you familiar with the More-with-Less cookbook? It's labeled "Commissioned by Mennonite Central Committee...in response to world food needs." The idea is that North Americans consume more than our share of calories, protein & sugar. It has quite a few recipes w/o meats - if you don't have access, give me an idea of the type of recipe you're looking for - soups, main dishes, side dishes,etc.

There are 2 good recipes in it for Peanut Soup. It sounds weird, but we've had it & enjoyed it. It does use chicken bouillon though.

response......I just was trying to find something that is different for him to eat ......I do have enough veggies as you can see.....he doesn't do chicken bouillon either.....I used a veggie broth one year to try to make a gravy for him......and it wasn't bad.......he never asks for anything special.....but I would like to do something anyways.....thanks for any help
 
Well, the first things that came to mind were all seafood/fish or tofu items. I remember having DS's friend come & having to make vegetarian things for him. Anything with a rice/bean or corn/bean combo was a complete protein. I used to do a thing with corn, refried beans, tomato soup/sauce & taco seasonings as a small casserole & sometimes top it with cornbread (from a box mix.) I used to put cheese in, but it's good without. That doesn't really go with the T'giving meal though.

What about fried rice? You can toss in all kinds of stuff to make it look festive.

I kind of like this one, although the cookbook lists it as a veggie dish. I don't really consider pumpkin a veg - more like holiday specific.

Cook together chunks of peeled pumpkin (or just used canned, but not the pie filling type) with onions, tomatoes & seasonings such as nutmeg, thyme or cloves. Stir in half a cup of ground peanuts, cook 10 more minutes & serve over rice.

Or maybe if he likes squash, make him a:
Squash Boat
Cut a small squash in half & remove the seeds. Put it in a baking dish with 1/2" water. Cover & bake 30 min at 400. Fill the squash with chopped apples (or even applesauce) & sprinkle with cinnamon. Bake 15 min. You could "jazz this up" with some brown sugar and maybe some crumbs.

Chicken Free Fried Steak Dinner

Ingredients:

2 pkgs. vegan Boca burgers
4 cups flour
1 tsp onion powder
1 tsp garlic powder
1 quart soy milk or rice milk plain
salt and pepper to taste
1 stick of soy margerine
1 tsp non-aluminum baking powder
2 pounds of potatoes
1/4 cup of pure vegetable oil
side vegetables and drinks of your choice
Directions:
This makes a complete meal with bisquits and gravy, and serves 8.

Mix 1 cup of flour with water to make a paste. Set aside.

Mix the onion and garlic powder with 1 cup of flour. Set aside.

Coat Boca Burgers with the flour paste and then with the seasoned flour mixture.

Peel, cook and mash the potatoes.

Prepare bisquits: Place 2 cups of flour in a bowl and add non-aluminum baking powder and mix. Place small drops of cold margerine in flour mixture and salt to taste. Cut with a fork until margerine and flour are mixed. Add soy milk or water just enough so that dough resembles risen yeast bread. Cut into bisquit shapes, and place on baking try until 10 min before meal is completed; and then bake in a 375 degree oven until brown.

Heat oil in a frying pan. Place coated boca burgers in oil and fry until golden brown or until desired browness.

Meanwhile, place 2 cups of soy milk in a small pot. Add salt to taste and pepper; but make sure there is enough pepper to see, but not so that the gravy is hot tasting. It's really good if you add a little bit of garlic and onion powder. Add some remaining flour paste to thicken when ready to serve.

This is a really great meal, and anyone who is not a vegan and likes chicken fried steak will love it


Instead if the soy margarine I would try smart balance. It is a non hydronated margarine, and it is pretty good.

Hi Pumba,

I just got my Nov/Dec issue of the "Living Well" magazine that the insurance company sends because I'm diabetic. On the back cover was a recipe that I thought might work for you - no milk, no meat - and you don't have to do it with sugar substitute.

Squash Stuffed with Rice
1 1/2 c cooked rice
1/2 c chopped walnuts
1/2 c cracker crumbs
1 medium onion, finely chopped
1 egg whites, slightly beaten
1/2 tsp ground sage
1/2 tsp nutmeg
1 Tbl chopped fresh parsley
1 Tbl brown sugar
freshly ground pepper
3 acorn squash, halved & seeded

Combine all ingredients & spoon loosely into squash halves. Bake in foil-covered pan until squash is tender at 350 for 60 min. Makes 6 portions.

I thought this sounded pretty good.
