I can't help with an organizer or the skiphop because I don't have either. I also don't have the Volo, my mac is an older model called the Vogue, I believe, and it is a heavier model so it may not have the exact same issues as the Volo.
But, could you get away with just using the basket underneath and maybe just attach a drink holder for the sippy cup? If all you are carrying in the organizer is a pull up and some wipes, I'd just put them in the basket in a ziploc bag. You may want to consider even getting rid of the wipes container and keeping them in a ziploc bag as well. Once I had my third child, I found I needed more wipes for an outing then I could fit in a 'travel pack' wipes container so I ditched the container and keep wipes in a ziploc baggie. Takes up less room and not as heavy.
