I've looked at Touring Plans, but I assume that's not an accurate way to guage which nights will be the least crowded for the party. We're very flexible, just want to pick the least crowded time. Any advice; time of the month, day of the week?

Which nights do you think will be less busy, those that offer the discounted advance purchase rate or those not offering the discount? I guess there's a couple different ways to look at why some nights are being discounted.
That was my experience in 08. The last Tuesday party, Dec 16th, sold out, but Thursday the 18th (the last party that year) did not. The CM's said the prior Tuesday, the 9th, had sold out too. It made no sense to me until someone here on the DIS pointed out that those were discount nights that year.
Last year every party the last week sold out, discount or not.
That certainly is a possibility too. Sure is what Disney is hoping for. I have been at parties that had quite light crowds and others that were very busy, hard to predict.
