what are your must see attractions or rides? We have never been to
Universal and want some input please.

Personally I think everyhing US has to offer is worth checking out at least once, my personal favs at US is the Mummy, MIB, Shrek 4D, but really depends on what you like.

I like IoA better myself, the Hulk, Jurassic Park, etc.

The Simpsons, MIB, The Mummy in US and I presume everyone is going to want to Harry Potter in IOA. Also The Hulk is a pretty good coaster and you shouldn't miss the water rides.
 
At Universal Studios:
-Revenge of the Mummy (dark coaster / thrill ride)
-Jaws (although look for the Amity Boat Tours sign in the park, since it's not titled Jaws)
-E.T. (riding on bikes with E.T. to his home planet)
-Men In Black (like a giant arcade - shooting laser guns at aliens whilst in a moving car)
-Animal Planet (aka Animal Actors) stage show
-Disaster (see an earthquake from an underground train)

At Islands of Adventure:
-Spiderman (excellent 3D/real thrill ride)
-Hulk (great coaster)
-Dueling Dragons / Dragon Challenge (great coasters)
-Popeye and Bluto Bilge Rat Barges (river rapid ride - extremely wet but fun!)
-Jurassic Park River Adventure (animatronic dinosaurs with big water drop)
-If you're going after the HP opening, Forbidden Journey!

Food-wise, at The Studios I enjoy Mel's Drive-in. At The Islands, Mythos and Thunder Terrace Falls are pretty with good views.

I agree with what was listed above, but I think if you can, you should definitely see everything. :)

I recommend the Horror Make-Up Show as well. Very funny and a nice way to get out of the heat. :)

As far as food recommendations go, I would recommend the following...

CityWalk - Margaritaville, NASCAR Grille or Bubba Gump's

IOA - Mythos (table service) or Thunder Falls Terrace (counter service)

Studios - Finnegan's (table service) or Louie's (counter service)
