Lion King show, Tarzan show and take the train to Rafiki's planet watch. These are 3 MUST DO's for when we are in AK with my 2 and 4 year olds who have been going since they were only a few months ago.
If you are going because there are others in your group that want to go then OK, but if you are going for the toddler...skip AK altogether in favor of something else...
LOTS of walking between places and not much that interests them in my opinion

Wow. I would NEVER skip AK with a toddler. When we went with my cousins last December, the 2 year old in our group loved AK the best. She was crazy about the Safari and about the Gorilla and Tiger walking trails. She was just thrilled with all the animals in the Oasis area and Festival of the Lion King was probably the highlight of her week!
Donald's Breakfastsauras and the character paths in Camp Minnie Mickey. The park is very spread out. There is alot of walking...so be prepared for that. But there are a lot of stops along the way to look at animals. My DD2 loved it!
Last year my daughter enjoyed the Boneyard, especially digging for the dinosaur bones. She also liked the Lion King show (the best show in the parks in my opinion), the safari ride, and Triceratop Spin.
Our DS had just turned 2 when we went to AK. He loved the Kilamanjaro Safari ride, Festival of the Lion King and the train to Rafiki's Planet Watch. He was so enthralled with the Lion King show (he was clapping and giggling the whole time), the actors that were near us (we sat on the aisle right next to Simba) were watching HIM the whole time and smiling and laughing. The Safari ride is a quite bumpy at times so it would depend on your child for that one. But the train ride and the petting zoo were also a big hit. Have fun!
