I understand that the Family Suites are located in the Jazz and Calypso Buildings. Is there any reason a certain building should be requested? We prefer close and quiet. Are there any other request that might be important here?

IMHO "Close and Quiet" is an oxymoron at WDW.

we just spent 9 days in the Jazz buildings at ASMu. Our room was extraordinarily quiet. Given the location of the Jazz buildings, i would guess that all of the rooms are quiet (not near a pool)..
but even in Calypso, i would assume that only the rooms facing the pool would be potentially noisy....those facing away shouldn't be a problem..

We just stayed three days at Calypso and three at Rock (we needed more room, so we went to Rock for adjoining rooms). I thought Calypso was really quiet. We had a room facing the pool, and with your door shut, you can't hear the music or the people. Rock was really quiet, but a bit of a hike to the food court, etc. I would say Jazz would be your best bet...not right on the pool, but no too far away either.

Had you planned on moving to 2 rooms or did you find the suite too small?

I would just ask for a room that faces away from the pool.

We stayed in Jazz this past April vacation (can you say busy?). We were in a standard room and could hear nothing as far as the pool was concerned. My brother and his family stayed in a Suite facing the inner court yard and it was quiet in their room as well. Keep in mind that there were one million teenagers running around from dance clubs and band groups from schools. I would consider the rooms very quiet in Jazz. The only time we heard anything was when they would run and scream while running by our door. ahhhh to be a teenager again :rotfl2:
