Not exactly Disney merch, but for something unique I love the shops in the WS...especially France, Japan, and the UK. France's kitchen shop always smells so good
Pretty much all your standard gift shops are good for kids, but I think Mouse Gear and the World of Disney store in DTD are good choices. Just be careful not to lose them - especially at World of Disney! If you let bigger kids browse on their own, be sure to have a designated meeting time/place or give them a phone so you can find them. That store is so huge, you could easily get separated from another adult, let alone kids.
Many of the park shops carry a lot of the same items. There is some variation if you really search. As previously stated, the WS shops carry unique items, but many of those aren't "Disney" items, they're products from the countries represented there.
For a comprehensive hit try DTD. The World Of Disney/Once Upon A Toy/Art Of Disney/and the Christmas shop will have much of what you'd like to take home. Adult DD likes Tren-D, DW and I like going in there just to help her pick out things she might like(we raise a Disney daughter)
The resort gift shops tend to have items that you might not see elsewhere on property, some themed to the specific resort.
There is so much merch that you can go from store-to-store at WDW and notice things you didn't notice in the last shop. Not because it wasn't there, but just displayed differently.
