that meet the following criteria:

1) set price
2) not a buffet (prefer to have the food brought to our table)
3) not in a park (we won't have tickets)

Need places for two evenings.

Right now, I'm thinking 'Ohana and Hoop dee Doo.

Any other suggestions?

I think other than Spirit of Aloha and Whispering Canyon (if everyone orders the skillet), those are the only options that fit your criteria.

Hows your pocket book? Chef's Table at Victoria and Albert's or Queen Victoria room are incredible but way over the top costly!!
Ohana's is very good and fun for meat lovers.

Can you fit eight at the Chefs Table?

Ok, you said Dinner Experience which suggests only HDDR or Spirit of Aloha. HDDR wins that battle for me. (You said adults, so MBYBBQ isn’t viable). Now, if you want to forego the show and have a nice adult dinner there are many viable choices..

With that set of criteria, I can't think of a place I'd recommend other than the 2 you're considering. V&A's would be great, but I wouldn't call it fun. Spirit of Aloha gets mixed reviews at best.

You've really stumped me!

The only other thing that comes to mind, if your group like bowling, is Splitsville.

You didn’t mention budget. The Highway in the Sky Dine Around is pricey ($170 each) but could be fun (progressive meal around monorail resorts). I think some of the stops are passed appetizers but dinner is definitely sit down. I’m not sure what nights it’s available.

Wanyama Safari in Animal Kingdom Lodge is something to consider, but it’s quite pricey and it’s limited to 12 people per night, so it might be challenging to get a reservation for 8.

It’s a 90 minute personalized safari with dinner at Jiko. You meet at 3:20, have a pre-safari reception, safari, then dinner.

I’ve yet to go due to time, but it sounds like a really cool experience.
