If it were me, I would choose space (quality) over time (quantity).
For just two people a studio would be fine. In January DW and I spent a week in a studio at BWV and I never felt cramped. With two there will be no need to pull out the sofa bed (I would hope) which keeps the room feeling larger. As long as you don't feel you need the full kitchen I say take the exta time as the luxury instead of the space. You can go a little slower or try thing you haven't done before like tour or minigolf or extended touring of other resorts. Head out to Universal or Sea World or further afield.
Take more time to enjoy yourselves away from the stress of work and normal life. To me that's a luxury.

I think you came up with a good plan - to do a split stay. But like another poster mentioned, I would start in the studio and then switch up to the 1 bedroom. That way you can get your laundry done too.
I like the idea of the split stay and make it 10 days! If you were even consdering a studio for 13 days, you would be fine for 4 days studio/6 days 1 BR or even 5/5. Also, when you get there, you probably spend more time in the parks and then by day 5 will be ready to relax more. Definitely start in the studio, then move up to the 1 Br.
