I see that it says only 1 Park can be booked per membership. So if I go to Epcot moonlight magic in August, does this mean I can never go to Epcot again for moonlight magic ever?!

No, I think it means you can't book both MM nights for the same park during the same year. So you can do August, but not the July one and the August one.
