Hi :wave:

I bought some of this cheese from our supermarket - imported from USA - and wondered what you generally use it for. Is it best uncooked in sandwiches or with biscuits for cheese or do use it for cooking too? Can you toast it? ( It looks like Edam cheese from Holland and Edam doesn't toast very well!!)

I like to use it on crackers, and on tacos.

I have used it on a bread recipe, too. It did very well in the oven.

I took a round loaf of bread criss/cross cut it, pour melted butter over it (to get in all those little cuts). Then I put little slices of the cheese inbetween the cuts and then cut up green onions and put that over it.
I wrapped it up in aluminum foil and put it in the oven for about 15 min. on low heat.
The cheese melted, the butter saturated the bread and the onions gave it a nice flavor...Yummy!

I don't know about others, but my DH loves it on mexican food. I've occasionally gotten it on pizza, too, mixed with parm and cheddar. I personally like it best when it's melted. :)
 
We, too, use it mainly for Mexican dishes. It melts nicely when tossed in tortilla soup & in a hot salsa/cream cheese dip, too.

I also toss it into our scrambled eggs (I don't do omlettes.) It's too mild for our tastes to eat just plain. We like very, very sharp cheddar to eat with crackers.

Here is a dip we make with a mix of monterry jack and cheddar cheese (you could probably get away with using just the monterry jack)

1 pound ground beef
1 jar pace picante sauce (or 1 jar mild salsa)
large block of monterry jack cheese, shredded
large block of cheddar cheese, shredded
small tomato, chopped (optional)
small onion, chopped (optional)

Brown ground beef and drain grease. If using tomato and onion, add to beef, cover and simmer for 10 minutes. Add jar of picante sauce/salsa, cover and simmer for 20 minutes.

Cover the bottom of a square glass baking dish with half of the cheeses. Using a slotted spoon, cover the cheese with the beef/salsa mixture (try not to get alot of liquid in with the beef if you can avoid it). Top beef mixture with remaining cheese. Bake at 350 for 30 minutes or until cheese is bubbling. Serve with tortilla chips.
 
my favorite dish featuring monterey jack is chilli relenos. I make a Releno casserole that I "made up" combining a few recipes I found

Roast 4 poblano pepper until skins are black (under broiler or over a gas top flame) ... remove seeds peel and stems and cut open to flatten

Brown 1 lb ground beef and one onion, add cumin, cilantro, garlic , red pepper and salt to taste.
Combine 1 cup sourcream wiht 1 tbs corn starch. Add this to the ground beef mixture along with 1/4 lb shredded MJ cheese, heat until cheese is melted and the sauce is thick. Might need to thin with a little milk.

Layer peppers in a casserole dish then add beef mixture.
Beat 2 egg while then fold in the yolks and another 1/4 lb of MJ cheese. Bake at 375 for 25-35 min or until top is light brown and puffy.


I like to serve it with spanish rice and steamed broccoli.
 
My DH favorite snack is to put shredded cheddar and jack cheese on top of tortilla chips that he layed out on a tray. Put them in the oven or under broiler to melt cheeses. Serve with sour cream and salsa for dipping. Add a beer and your all set for watching tv.

I made a mistake on the amount of cheese above. It should be 1/2 lb total ... 1/4 in the beef mixture and 1/4 lb in the egg mixture. I'll correct it in that post too.
 
We like to slice it and put it on top of grilled chicken sandwiches with a dollop of green chili salsa!

i make chicken quesadillas using monterey jack cheese. i'd be more than happy to post the recipe if you want!

Yes please post this recipe. I Love quesadillas. I'd probably be the only one eating them though.

Chicken Quesadillas

1/2 stick butter
2 1/2 teaspoons chili powder
1 teaspoon dried oregano
8 ounces mushrooms (whatever kind you want)
1 1/2 cups shredded cooked chicken
2/3 cup finely chopped onion
1/3 cup chopped fresh cilantro
2 1/2 cups grated Monterey Jack cheese
8 flour tortillas (the large kind)

Melt butter in large skillet over medium-high heat. Add chili powder and oregano. Sauté about a minute. Add mushrooms and sauté until tender, about 10 minutes. Remove from heat. Mix in chicken, onion and cilantro . Cool 10 minutes. Mix in cheese. Season with salt and pepper. You can make this part ahead.
On counter (or cutting board) put an 8th of the mixture on one half of each tortilla. Fold the tortilla (so that you end up with a half moon) and place in a large skillet over high heat.
Cook quesadillas until heated through and golden brown, about 1-2 minutes per side. Cut into wedges.
