We're going to WDW at the end of July and we were planning to go to MK on Saturday and EP on Sunday. But I've been reading some posts that say avoid MK on Saturday at all costs. Does anyone have any advice about this? Should I switch and go to EP on Saturday and MK on Sunday? I'm so confused!!!

We have also followed that reasoning before. We generally found it correct(sometimes not), especially when Spectro is at MK on Sat.
