Mixology Question

Can someone explain how we set up a Mixology for our cruise group. I've read its about $20.00 and I would need to complete a list for those who would like to participate and gather resv # so they can be billed by DCL. Once I gather this to send it to Guest Relations? Is there any easier way or right way to go about this.
