Minnie & Friends Breakfast - Characters?

So, my daughter decided that she wants to Minnie and Friends for her birthday breakfast. So, I thought it would be neat to have something for them to sign for her birthday; then, Shutterfly sent me a code for a free 8x8 photobook. So, I'm thinking I'm going to make her a little photobook for the characters to autograph for her birthday. We've never done autographs before, but we've met a lot of characters, and I hope to incorporate some of those picts in the book.

So, I've started on the book. Putting a small pict of the girls with a character, then some clip art and a bunch of white space on each page. I want to make the book flexible enough so that whomever we meet, they can sign. However, I was hoping you guys could help me by telling me who you've met there. I've searched through a bunch of threads and have come up with the following list:

Minnie
Chip & Dale
Pluto
Pooh characters
Fairy Godmother
Captain Hook
Br'er Fox, Br'er Bear
Honest John
I think I saw Alice and Mad Hatter in one post?

I'll have to make it flexible enough that if we don't meet the character, it will still look ok. I'm hoping that maybe we'll be able to catch some folks somewhere else in the park (like musical chairs or the Visa M & G) if we don't meet them at the breakfast.

We were there this past week and saw some characters we've never seen there before--I'm not sure that making the book specific to Minnie & Friends is a good idea...the characters aren't always consistent.

Anyhow, here is a list of who we saw:
Minnie
Captain Hook
Pooh
Tigger
Eeyore
Fairy Godmother
Brer Fox
Rafiki
Chip and Dale

This was our first time seeing Brer Fox and Rafiki at the breakfast. The others we've always seen there.

When I was there last Sunday the girl mouse from Cinderella was in there as well. I think they said her name was Celia?

OK. I'll be adding some mice clip art to the Cinderella/Fairy Godmother spread(I'm hoping that if we don't meet Fairy Godmother or a mouse that we'll be able to catch Cinderella at the PFF).

It's funny, the only one of the girl mice that I remember the name of is Mary (she was mentioned by name in Cinderella II). I totally spaced on the ones from the original movie having names!

I think the moral of the story is, other than Minnie you won't know who you will see until you walk in. Just know you will see some common and uncommon characters.

Thank you all for all the help! I was thinking about what DisSarahK said and am doing my best to make it flexible and not totally Minnie-breakfast centered.

So, right now I'm thinking (in the 20-page book):

I know we have a good chance of meeting some other characters, but they aren't my girls' favorites, so I would hate to have them in the book if they weren't there... The princesses and fairies I also know won't be there, but we can go to the PFF and Pixie Hollow to meet them. I also know that Chip & Dale are often at the Visa M&G, so hopefully we'll meet them one of the days we're there (even if it isn't on her birthday). I also know where Mickey lives...
