MIL With Bad Knees

We are going to DW next spring with my MIL who has pretty bad knees (her doctor has recommended knee replacements but she says no). She will be using a scooter for the week, obviously. I am wondering if there is an all inclusive list somewhere about which rides have moving floors in the boarding area and which can be stopped and which can't as well as those rides that you have to step down into and back out of (like POTC). With her knees the way they are, I'm concerned she's not going to be able to do a lot because of how hard it's going to be for her with those things.

And my other quesitons, we are staying at POR and plan to go to DTD a couple of evenings. Will her scooter fit onto the boats okay? We used the boat once last year, but I just didn't really pay attention to this detail as it wasn't a concern for us then.

The first post of that thread is an index that tells what information is in which post.
Post 11 has some basic information about accessibiliy, including the moving walkway information you are looking for.
The only ones which can't be stopped are Peter Pan, Tomorroland Transit Aurhority and the exit ramp after you have gotten out of the boats at Pirates.
Post 11 has much more specific information about this.

Post 8 is about transportation and shows pictures of the boats like you will ride from POR to DTD. They are wheelchair and ECV accessible.

There are also posts on page 2 of the disABILITIES FAQs which talk about each park and list attractions with a step down or up to get in or out. There is one post about each park (posts 18- 21).
If she is concerned about the step in and out, I would suggest riding Small World or the ride in Mexico as one if your first rides. The step down to get in on those is similar. The advantage to the attractions I listed above is that you can watch the boarding and unload process while waiting in line and kind of plan your approach to the ride.
