Hey Cam...

Well actually, instead of using my carby portion of my meal on the tortillas or the pasta although I have lower carb versions of both in stock, I was surprised by some of my students with ice cream, Ben n Jerrys ice cream! They went for a pint run and brought me a pint of New York Superfudge Chunk. I pleasant accepted their gift and they were on the way so I altered my dinner plans so I could have a dish of ice cream.

The menu ended up being my usual starter salad, then I took the green bean recipe I posted before and tweaked it a bit (I upped the heat to caramelize the beans a little, tossed in the garlic at the end so it wouldn't burn and added a sprikle of parm cheese). With the beans I took a chicken breast and sliced it into "tenders" then grilled em on my George Foreman, when done I tossed em in some Buffalo wing sauce I threw together. I saved a few of the chicken pieces for lunch tomorrow as the breast was HUGE!

And after the main course, all within plan and the rules of my RM, I had a dish of the ice cream. It was delicious, and yummy, and felt great in my mouth! hehe! But I did not eat the whole pint, infact I did not complete the entire dish I scooped. I portioned out about 3/4 of a cup and left a few bites! hehe :goodvibes

If you want Cam, I will loan you the Gold for the weekend! hehe! :flower:

I'll tell ya: Your meals sound so much better than mine. I wish I could cook! I can open up a box of spaghetti, boil it, and add sauce, but thats' about it. I would love to be able to add more chicken to my diet, but cooking chicken intimidates me. I'm always afraid that I won't cook it well enough or that it will turn out rubbery. Maybe some day, I can take a cooking class at Chef Mikey's! :goodvibes

You'd have to jump in at having 20 days done already or something like that, since you have been so on-target for so long! Stop by that thread if you want to jump on the bandwagon! :cool1:

I can understand your chicken woes, I know I have trouble sometime overcooking (aka last night! a few pieces were drier than I would like!) it. Do you have a crockpot? I think it does chicken very well! Toss in a few frozen breasts in the morning with your "sauce of choice", it could be a can of diced tomatoes with garlic, a can of any cream soup, etc. Heck, if you are a soda drinker you can even use a can of cola or even a lemon-lime soda, makes a tender juicy chicken for some reason. Set it on low and when dinner time rolls around you will have tender and juicy chicken. The trick is starting with frozen chicken as it stays juicier, and it cooks all the way too. This is a great way to make shredded chicken for tacos too, toss in a jar of salsa with the chicken, and voila! :goodvibes

The cooking class I took in college was a 4 hour "lab" every friday and our textbook was Julia Child's "The Way To Cook." To this day I still use that book all the time. It is full of great basic techniques that you end up adapting into 1000 different things. No I get no money pushing the book! heheh!!

And of course there will be free cooking classes for all WISHers at Chef Mikey's! hehe

Although I did crave greenbeans when I was pregnant I had to eat them with ketsup. :confused3 Sounds bad, hey? But I still do it today. Thanks for coming by! The green beans and ketchup do not sound too weird to me. We were dicussing things people put ketchup on yesterday in my office because one of the women has mac n cheese with ketchup for lunch often. hehe!

You're chicken in the crockpot does sound yummy! I have always been afraid of cooking chicken, but I am slowly getting over that. My DH won't let me run the crockpot when no one is home, so I will make this on the weekend sometime!
