For the parking lot directly connected to the terminal, does anyone have any experience regarding whether the lot is open (not full) on a Saturday morning?

I take it that you mean the parking garage. Whether or not its full seems to be more seasonal...i.e. the only times I've seen it full have been on holidays. The outer lots always fill up first; once, they even let us park in the garage at the outside lot rate because all the other lots were full and there was plenty of space in the garage.
As an alternate, consider Midway ParkSavers, which is right across the street from the garage and the Orange Line train entrance. Once we learned about that lot, we stopped parking at the Midway-owned ones. You can find a coupon for a free day of parking there on ATA's website.

How early on Saturday? The earlier the better, 4:30 - 5am the garage is relatively empty with plenty of spots on all floors. As the morning progresses it fills quickly. By 9am - 10am usually filled on any day of the week. BTW I would stay out of Midway Park Saver as the spaces are very tight and door dings are inevitable.

How easy is it to get to the ParkSavers lot after dropping someone off at the terminal? Is crossing the street relatively safe (is it a busy street)? I will be there about 7 am on a Saturday. Also is this early enough for an 8:30 am Southwest flight? Thanks.

unless you have a ton of luggage, it's easier just to park and take it with you than to attempt the gauntlet for drop off. 59th street is easy to cross.

the Midway check-in for Southwest with luggage is very slow in busy times, my coworker last month barely made his Southwest flight getting to Midway 2 hours before on a Sunday morning. I would give 3 hours if you are checking luggage.

I have no experience checking luggage, since I just do carryon, and check-in via the website. (To get that "A" boarding pass)
