Mid January (MLK weekend before) - 2.5 days enough?

We are going in Mid-January to WDW and plan a few days at Universal Studios/IOA. It will be myself, husband and two children who will be 4 and 7 at the time of the trip. Is 2.5 days enough to do both parks if we get there at opening, etc? I know we really want to spend some time in the WWOHP just looking, etc. so I have no idea how long that will take.

That should be plenty of time in January...the crowds are usually pretty light. Just make sure you take your time and see as much as you can.
