Since there is no dining package for MMM, I'm curious if you would be able to get a late dining reservation at Blue Bayou or River Bell Terrace (outdoor seating) and see the show from your seats?
Well, I don't think BB would allow any views since it is inside POTC, but if you have the F! package at RBT you can probably see MMM there. Since there are so many areas to see MMM though, it might not be worth it.

CO will give you very obstructed viewing. There will be people walking in front of you along the pathway, there is a raised patio area between you and the ROA, and the restaurant is far from the waterfront. You would probably need to stand up to get a somewhat decent view of the projections on the water screeens and you might not hear the music that well because the speakers aren't aimed at the restaurant. If you really want to sit and eat while watching MMM, try getting a table at Plaza Inn that has a good view of the castle. But that view won't be as immersive as being in the middle of Main Street or being in front of IASW.
Honestly, you're going to want to be standing for this one. We were on Main Street Saturday night for it and as tired and worn out as everyone looked around me while we waiting, as soon as it started everyone was dancing. It's only 10 minutes long, but I get not wanting to have to camp out for a spot.
