I always forget about this board being over here...I really should try to remember it more often. Since I have gotten a few really good recipes off of this board in the past I thought I might try to return the favor. I hope you like it! :D

Mexican Chicken Casserole

1 chicken, boiled and deboned
1 bag Taco flavored Doritos
1 lb. Mexican Velveeta cheese (mild or hot to taste)
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Rotel (mild or hot to taste)
1 medium onion

Preheat oven to 350. Place meat on bottom of greased 9x13 pan. Crush 1/2 package Doritos, sprinkle on top of chicken. Add cheese sliced on top of Doritos. Blend soups, Rotel and onion in blender. Pour this over the cheese. Add last half of chips, crumbled on top. Bake for 30-40 minutes.

I've made a variation of this before:

Enchilada Bake:

2 pounds of ground beef and half and onion, sauteed and drained.

1 can cream of mushroom soup
1 can cream of chicken soup
1 soup can of milk
1 large can enchilada sauce with green chiles
1 tsp chili powder

Heat the soups, milk and enchilada sauce and chili powder in a sauce pan and set aside.

1 large bag Doritoes, regular
2 large bags of cheddar cheese (or shred your own, as I prefer).

Layer chips, meat, sauce and cheese in a baking pan. Repeat.

Bake at 325 for 25 minutes. Cool for 15 minutes.
 
Both of these sound great. My kids like Mexican flavors so this might be a good dinner idea for my house. I am so tired of making two or three dinners to please everyone!
 

I have one too!

About 2lbs chicken cutlets cut in strips or chunks.
1 can cream of mushroom soup
about 16oz salsa (or to taste)
1 or 2 cups grated cheddar cheese

Saute the chicken until cooked through. Toss in the can of cream of mushroom soup and the salsa. Bake in oven 20 minutes, then put the cheese on top, bake another 10 minutes.

depending on my mood, I also add cooked rice (otherwise serve it with rice), the other day I also added a can of corn and a can of kidney beans (drain both).
