I heard people view their MM photos each night at the hotel, how do I do this? Also, when I get home from my trip can I edit and add borders etc before downloading? How does the whole process work? TIA

If you bring a laptop you can look at your photos in your room. Alternatively, you can look at them at a Photopass place in a park, but the lines can be long for that (because you can also purchase pictures there).

You can edit borders, crop pictures, etc. when you get home (or in your hotel room if you want).

The photos are good in your account for 45 days. If you purchase MM, you have 30 days from your first download to make changes and download the rest of your pictures.

Thanks so pretty much my main question is, if I am just viewing my pics, I don't have to download them in order to edit/add borders etc...?

No, you don't have to download them in order to make edits and add borders. You may want to download them prior to doing so to make sure you don't lose any of the original photos (if you want to keep them without borders, etc.), as the system sometimes has issues (surprise, surprise).
