So I added memory maker to my account today for my trip next month and am confused about what I have to do. There are no dates linked to it or anything so does it just start working as soon as I use it in the parks? Do I have to do anything to it before I leave?

Who is in your traveling party? If everyone you'll have is staying in your room and you see their names in your family and friends list in your MDE account, then there's nothing more to do ahead of time.

Make a point to stop at photographers you see stationed all around the parks.
Enjoy the rides that have photos and videos that automatically show up in the photopass section of your MDE.
Look at your photos on your trip or soon after. If you don't see some you know should exist, there's an online report form or phone number to call. They are very good at locating missing pictures if you can give a rough time, location and description of who should be in the shot.

Have fun!

Once it is tagged to your account, you can use it to activate 30 days worth of downloads (3 days after it's linked). So if you download your first picture on day 1 of your trip, you then have 30 days to request other downloads for the first time. Or if you wait until day 30 to download your first picture, you can request downloads until day 60 (after your first picture was taken) but remember that pictures start to expire 45 days in. For most people the 30 days is key if they are trying to do multiple trips on on MM purchase. The downloads should remain active in your account until the picture expires. As @Mikie said, as long as everyone in your party is liked in your Friends & Family, then you should be able to see their pictures in your account, and edit/download them.

In a nutshell - Pictures expire 45 days after taken. MM allows you to request downloads for 30 days.

If anybody on your list has their own MDE account you need to make sure they have permission to add and view photos.
