Memorial weekend what to do?

Im in the process of fine tuning my schedule for our 3 week trip in May.
I still have a couple of days outstanding for memorial weekend, we dont want to be hitting the parks on these days as i understand they are usually more busy.
So has any body got any alternative ideas, im sure most places will be busy anyway as this is a public holiday. We have transport so really getting about isnt a problem, we already have a day at the beach planned, and the normal boggy creaks, etc etc.
So any ideas where the masses of americans wont be?.

Winter Park is a good alternative to the hustle and bustle of Orlando - they have a scenic boat tour. When we went in 2001, the boat tour was confined to one lake because of the drought, but if it's back to it's old route, through the canals to other lakes, it is worth doing.
