My DH wants me to make a meat loaf but I have never had it. I know it is simple but we never ate it and I have no idea. Please give me a very simple recipe. Thanks!
 
1 pound of hamburg
1/2 onion chopped
1 egg
1 piece of bread pulled apart in small pieces
1 can of mushrooms, drained
1 or 2 squirts of ketchup
mix and cook at 350 degrees for about 45 minutes
 
I didn't make meatloaf for years after my 1st few tries. I just wasn't thrilled with it & it never tasted like my mother's. I finally figured out what I was doing wrong & have since come up with something we really like. However, it's not a recipe - in that I just pour stuff in without measuring.

I usually make several at a time, using the entire family pack of ground meat ~3 lbs. (I freeze the ones we don't eat right away. It's also great for sandwiches.) Also, I've found that the leaner the beef the better we like it. I'll try to give you what I use with approximate measures.

~3 lb ground beef
2 eggs
~2 Tbl ketchup
~2 Tbl BBQ sauce - flavor of your choice
~1 tsp beef bouillon granules
1 - 2 Tbl A-1 sauce
1 Tbl worcestershire sauce
~1 tsp garlic powder
~1/2 tsp of any or all of the following: cardamom, coriander, turmeric, paprika, chili powder, cumin (not to exceed 2 tsp total)
Progresso Italian-style bread crumbs

I beat the eggs with a whisk & then add all the flavorings to that. Pour this into the ground beef & mix thoroughly. Add enough bread crumbs to "take up" the excess moisture. Bake at 350 for 45 min.

Oddly enough, we found that the bread crumbs were what was missing and the A-1 & BBQ sauce/ketchup combo make a big difference. We've been spicing it up (with the cardamom, etc) ever since we stayed at AKL last year. Mmmm!

I like this one. It's very tasty and because it's a micowave version, it's very fast too.

Old-Fashioned Meat Loaf
1 egg
1-1/2 lb. ground beef
1 tsp. Worstershire sauce
2 tsp. dry mustard
1 cup fresh bread crumbs
1/4 tsp. pepper
1 onion finely chopped
3/4 cup tomato sauce
1-1/2 tsp. salt
1 Tbsp packed brown sugar
1 Tbsp. white vinegar

In large bowl, beat egg until foamy. Add beef, crumbs, onion, 1/2 cup tomato sauce, salt, Worcester sauce, 1 tsp. mustard and pepper; mix well. Form into 9x5 loaf shape and place in 11x7 baking dish. Cover with vented plastic wrap and microwave at High for 5 minutes or until no longer pink, rotating dish once. Drain off fat. Microwave, covered, at Medium for 10-12 minutes or until meat is cooked through, rotating twice. Drain off fat. In bowl, mix together brown sugar, vinegar, remaining tomato sauce and mustard. Spread over loaf. Microwave, uncovered, at High for 2 minutes or until sauce is hot. Makes about 6 servings.

For a change, sometimes I use Spaghetti sauce instead of tomato sauce in the meat itself, and then use it on top instead of the other mixture.
 

I make 5 or 6 different ones, but this one was VERY good :)

Mom's Meatloaf

1 pound ground beef
1/2 pound ground pork
2 large eggs -- slightly beaten
1/2 cup seasoned bread crumbs
1/4 cup finely chopped onion
1/8 cup finely chopped green bell pepper
1/8 cup finely chopped red bell pepper
1 tablespoon plus 1/4 teaspoon Worcestershire sauce
1/4 teaspoon coasely cracked balck peppercorns -- or to taste
1/4 teaspoon coarse salt -- or to taste
1/4 cup ketchup
1 1/2 teaspoons brown sugar
1 1/2 teaspoons Dijon mustard

Preheat oven to 350º. Lightly oil 8 1/2 x 4 1/2" loaf pan.
In a large bowl, combine beef, pork, eggs, bread crumbs, onion, bell peppers, 1 tablespoon Worcestershire sauce, peppercorns and salt just until well blended. Do not overmix.
Place in prepared loaf pan.
Bake for 50-60 minutes, or until the internal temperature taken with an instant-read thermometer is 155º.
Meanwhile, in a small bowl, stir together the ketchup, brown sugar, mustard and remaining 1/4 teaspoon Worcestershire sauce.
Brush the meatloaf with the ketchup mixture and bake 10 minutes longer.
Remove meatloaf from oven and let stand for 10 minutes before serving.

A different twist to meatloaf! This gets scarfed down at our house every time I make it. It freezes well too!

Honey Mustard Meatloaf

3 pound lean ground beef
2/3 cups dry breadcrumbs
4 eggs
1 cup chopped onion
2 teaspoons basil leaves
1-teaspoon salt
1-teaspoon pepper
3 tablespoons scallions,
chopped
4 tablespoons Dijon style mustard, divided
4 tablespoons honey, divided

1. In a large mixing bowl, mix the ground beef, breadcrumbs, eggs, onion, and seasonings. Mix completely. I use my stand mixer to do this, makes it easy and quick.

2. Add 4 tablespoons of Dijon mustard and 4-tablespoon honey, mix well.

3. Shape into 2 loaves. Place in pans.

Bake meatloaf uncovered for 30 minutes in a 350-degree oven.

Combine 2 tablespoons Dijon style mustard and 2 tablespoons honey in small bowl.

Brush with the honey mustard glaze.

Bake for an additional 20 minutes.


I usually make extra glaze to pour over slices when serving.
 
I don't measure anything just throw it all in
Ground Beef
1 or 2 eggs
breadcrumbs
seasonings(whatever you like salt pepper,garlic etc)
chopped onion if I have one
and I always grate 1 or 2 carrots into the mix
mix everything up shape into loaf pour a can of tomato sauce over the top and bake
 
Seeing I make the all time worst meatloaf, and I mean worst. I'll have to try some of these.

I don't know what it is with meatloaf and me but it never comes out good. No matter what I do to it. I'm thinking maybe I over cook it or something.

Ask me to make anything, from soup on everything comes out yummy. When it comes to meatloaf my family runs, and I mean runs the other way.
