Hi all! I'm looking for some meat-free freezable meals that are not too difficult to make. Any favorite recipes? My schedule will be getting really busy over the next few months, so I'm going to be spending my weeks cooking and freezing, cooking and freezing, cooking and freezing (you get the idea). I'd looooove some easy recipes that freeze well if anyone has any!!! :worship::goodvibes

THANKS!!! :thumbsup2

I did the cook & freeze last weekend!
I did a meatless lasagna, and I did a meatless chili in the crockpot that froze very nicely.
This weekend, I brought the crockpot back out, put in rice, the frozen chili & frozen veggies on top & that made an even better meal!

:goodvibes have fun cooking!

Edited:
I re-read & see you want receipes - i make everything by "feel" so to speak - haven't used a receipe in years!
Lasagna is any recepie just minus meat (or meat sauce).
The chili was crumbled tofu (which you can choose to use or not) with chili spices, & "browned" in a pan. (tofu doesn't technically "brown" LOL) That went into the crockpot along with 1 can of each - kidney beans, black beans, pinto beans & garbonzo beans (chick peas). I also added green chilies & garlic.
(if you want to use tofu, freeze it 1st, it will crumble much easier!)

I'm thinking pasta might be a good idea. I see all of the lean cuisine meals and they all have pasta in them. If they can do it, so can I!! :goodvibes

I make a week's worth of pasta salad at one time and freeze it. I take a bag of broccoli, cauliflower and carrots add some tri-color pasta and grape tomatoes, a little olive oil, red wine vinegar and some Italian Seasoning. Freezes well and is really cheap. I spend about about $7 for everything since I always have vinegar, olive oil and seasoning on hand.

Quiche, any pasta dish (lasagne, baked ziti, broccoli alfredo), Cheesy rice and broccoli, pizza, veggie soups.

I like www.allrecipes.com for recipes since they have reviews! Good luck!
