We've stayed off-site and eaten most of our meals in. We found what worked best for us was to have a big breakfast, snack in the parks (we brought our own snacks, water and flavor packs) and then went back to the house for dinner.
The first night there we made up casseroles in the disposable foil pans and we used the crock pot a lot. We also did breakfast casseroles in the disposable foil pans.
For the crock pot we did meatballs and spaghetti sauce and had spaghetti in meat balls one night, then did meatball subs another night. We also did pulled pork, Mexican chicken and beef stroganoff. We tried to keep things as simple as possible. Our house also had a grill so we grilled out and made a big potato salad, pasta salad and tossed salad that would take us through a few nights.
