Meal vouchers??.......Help...

I have been to Disney several times, but never used meal vouchers. I am planning to go back in October and trying to save more this time and prepare a little better. I usually save enough for hotel, air and then just bring my spending money.... BUT if I can plan my meals this time too ---that would really help... I always eat at a sit down at least once a day, usually trying for a character meal. Can someone let me know all the in's and out's of these meal voucher.....???..... Thank you soooo much!!!!!!
