For those of you that get a room with full kitchen, what meals do you do that are quick and easy? I have breakfasts and lunches figured out but only have a few ideas for dinner.

Sloppy Joes is an easy meal! Ground beef, Manwich sauce & buns!

We like another meal called Taco Soup. I brown up ground beef, then add to a pot with cans of assorted beans (red kidney, black, white, pinto), a can of corn, and an envelope of taco seasoning. Serve up with tortilla chips & shredded cheese and/or sour cream.
 

Here's some ideas I have so far for our next trip in two weeks:

Breakfasts: Waffles, pancakes, bagels and cream cheese
Lunches: Grilled cheese, quesadillas, chicken Caesar wraps, subs
Dinners: Tacos, Pizza, tortellini

This of course doesn't include snacks of fruits, veggies granola bars, salsa and chips, etc...

We are staying in a vacation rental, and will probably do a lot of BBQ meat with salads etc.

We get a roasted chicken.. and have salad with it. any left overs is sandwich meat the next day .
pasta with a quick sauce..either from a pack or jar. not my fav ..

frozen pizza again with salad

go out a few nights..

last night is a free for all... anything that is left over .! just dont do ice cream on pizza. :rotfl2:
 
Yeah we do salads with every dinner as well - but roasted chicken I never thought of for our trips. Totally adding it to my list!
 
We typically do spaghetti and salad one night, tacos, grocery store rotisserie chicken (w/ salad and Mac & cheese), and pancakes and eggs.
 
Great ideas everyone, thanks! We are headed down in May for 8 nights and our plan is to do breakfast in room, pack lunches and snacks, and do dinner every other night in room. My DS has multiple allergies and it is so much easier just to eat in room then out every night.

I'm also thinking one night when we do breakfast that I will make extra pancakes and then have them for breakfast the next day with eggs.

I'm getting so excited!!
 
Will you have a crock pot? That gives you a lot of possibilities and then dinner is ready when you get back... (jumbalaya, stews, soups, lasagna, all can be done in the crock pot).

Pasta is easy. Pound of ground beef, brown it, dump a jar of sauce over it and heat. Cook some noodles. Serve with frozen veggies (reheated obviously) or one of those bagged salads. Or you can do frozen meatballs instead of ground beef.

Breakfast for dinner is always a hit here, and like you said, easy and you can make extra for the next day.

Frozen lasagnas from the store are great, but they take like 2 hours to cook. So that may be an issue.

I've done peanut chicken over rice noodles. I don't remember the exact recipe, but it was easy.

If you like fish, salmon cooks up quickly. Serve with rice and a veggie and it's quick and simple.

Pre-formed frozen hamburger or turkey burgers, just grill on the stovetop and serve with potatoes of your choice and veggies.
