meal idea needed for atkins family...

My best friend and her whole family of 5 is also doing atkins and have been very successful

here is where i need the help
she had surgery last week and can't cook for awhile so everyone at our church picked a night to make dinner

mine is tomarrow

the problem is i have never had to feed a family of 5 the kids are all boys ages 11 6 2

any suggestions on easy to prepare meals that i can transport that won't totally mess up there plan??

I'll check my recipe book when I get home but here is something off the top of my head.

Salsa Chicken - Put 5 frozen chicken breast in the bottom of a crockpot and pour a jar of salsa over it (check carb count) and cook on low all day. Make a large container of Cauliflower Rice and they can spoon the salsa chicken over the Cauliflower. Yummy!

Kids and adults love the Parmesan Chicken Tenders listed in Eating Healthy. My son can't get enough of them!

BBQ chicken wings are another favorite. I roast them first then drizzle on Walden Farm's Sugar Free Carb Free BBQ sauce. It's delicious!
 
Fish chowder (I think there's a recipe on the Recipe Board here on WISH) is a great option for an Atkins family of 5. I find one-pot meals or casseroles the easiest for delivering meals to other families.

Also, you can make up some sf jello or cheesecake to send along with dinner (if you're up to it!) They'll LOVE you for it :)
 

There are a lot of dishes that are low carb or can easily be changed.

Beef stew... leave out the potatoes (try rutabagah instead) and go light on sweet veggies like carrots

Veggie soup.... same as above. I add soybeans to my soups and chili. They are high protein and low in carbs

Lasagna... use sliced firm tofu in place of noodles

Pot roast... follow guidelines for beef stew

Hey kaylajr, I too am from upstate NY. We are just outside of Rochester. Where are you?
 
If they like hot wings, try the Archie Moore Buffalo wing sauce and make a big batch of wings. DH was hungry, I wasn't home, and he couldn't find anything he wanted so he used it. Turns out he really liked it! There's no sugar or sugar substitute in it, so it tastes great.

You can buy the Atkins muffin mix and make corn muffins or corn bread to go with it.

Bleu cheese or sour cream dressing are certainly allowed - just make sure the bleu cheese dressing doesn't have extra carbs.

It might be a bit spicy if the kids don't like spice, but my guys love it.
 
I bread chicken wings with parmesan cheese and deep fry them. The texture is very close to real fried chicken and they taste great, too. A salad and chicken wings would make a pretty good meal :)

I'll bet the kids would love the chicken tenders, too.

Also, corned beef and cabbage isn't difficult to prepare and makes a yummy meal.
