Meal Choices for quick trip.....

I am surprising DH with a quick (48 hours!) trip to Florida for HHN as a belated birthday gift. As a plus for me, we are also attending MNSSHP. We will arrive @ the airport at 8:20 on Thursday morning (11/1) and will leave at 8am on Saturday, 11/3. We're staying at Coronado Springs in a king room with 2 day park hoppers and the DDP. Thursday night we will be attending HHN at Universal and then Friday night we will be at MNSSHP. This is my tentative plan:

Check into CSR and head to the Studios for Tower of Terror and Rock N Roller Coaster, we will need lunch since our plane leaves BWI at 6:20! Might walk around a little bit but then head back to CSR to check out the pool as we have never stayed there. I can't decide whether to do counter service lunch and then a TS dinner or reverse them. HHN starts at 6:30 at Universal, so since most TS don't start until 5:00we would be pushing it to get to Universal. Currently, I have Sci-Fi booked for lunch and Maya Grill/Boma booked for dinner. I need to cancel two of them.

On Friday, I figure we will head to EPCOT in the morning to ride Soarin', Test Track, Mission Space, etc. and then head back to the Food & Wine Festival in WS. I figured we'd do counter service for lunch and then I have ADR for Crystal Palace for dinner @ 4:45 since we'll be going to MNSSHP--thinking I may want to make that a little later. Would like to get into LTT, but they are all booked.
