Traveling with my adult children in spring to WDW. Does everyone need to use the app My Disney Experience or only the person/persons who are managing the reservations and Fast Passes? Same with Universal app except I understand the Universal app can also hold your park ticket.

The MDE app can be useful for checking FP and ADR times, but no one "needs" to use it if they have other ways to know the schedule. (And depending on how likely someone may be to accidentally cancel/change hard-won plans, the person/persons who are managing things may not want those others to have access to the app!)
