I suspect the difficulty you had (and the reason you had to call) is that you have a split stay - room only, followed by a package with free dining. In order to book the 180 + 10 days, the system only recognises the first stay and, therefore, allows you only to make ADRs for the duration of the first stay. It would have opened up again at the 180 days point prior to your check-in day for the second part of your stay. Still, looks as though the dining agents managed to resolve that for you.
As far as FPs are concerned, I have no idea whether you will experience the same problem. It may be that, as you have an onsite stay for the duration,
MDE will allow you to make all FP+ at 60 days prior to the first check-in date but I suspect you may have to wait until 60 days prior to th second to make the remainder.
