My memory, not 100% sure, is CRT changed to 2 credits in the middle of the year.
The DDP brochure says restaurants are subject to change.
I'm also surprised about the 12/4 date. Could the restaurant be trying to negotiate better terms with Disney for the DDP in 2012?
But CRT is run by WDW and isn't subject to a contract involving an outside vendor. LeCellier made its switch to signature status in March, but again it is run by WDW.

According to Buzz's site, looks like the buffet will only be breakfast and lunch with dinner remaining to be the same concept as is currently being done. Breakfast & Lunch Buffet will be a counter service credit redemption and NOT a table service credit redemption.They will Have Quick foods at there Newer Bakery/store that will count as a CS point. Pepper MArket will Change to a TS Restaurant doing a Full Buffet All day 3 meals. Maya Grill will be only open for Dinner only as a signature Restaurant also a TS . Remember Disney does NOT own these restaurants at Coronado Springs, Palmas Services does. They also Own the Food and Beverage areas of Mexico Epcot.

Main thing is that it appears to be a test run only for 1 month then back to normal food court I assume, unless perhaps crowds are way up. Also note that the buffet is considered a CS, not a TS.

From time to time, we evaluate our operation and occasionally make adjustments to meet the changing needs of our Guests. As part of that effort, the Pepper Market and Maya Grill dining locations at Disneys Coronado Springs Resort will be testing some adjustments to their operations from December 4, 2011 through January 4, 2012.
The Pepper Market will transition to a true buffet style experience for breakfast and lunch beginning Dec. 4. In addition, the Maya Grill will no longer be open for breakfast; as Guests will be able to enjoy the array of breakfast offerings at the Pepper Market buffet beginning Dec. 4.There isno pricing change for Maya Grill.
The pricing for Pepper Market will be the following:
BREAKFAST:
$14.99 for adults;
$8.99 for children;
LUNCH:
$16.99 for adults;
$9.99 for children;
Pepper Market will continue to honor the Disney Dining Plan Quick-service Restaurant meal entitlement for all three meal periods (breakfast, lunch and dinner). The automatic service charge will be eliminated and an optional tip line will be added to the receipts (there will still be a service charge for dinner).
