I'm not sure about flights either, but I prefer October over May as well. I love the fall decorations as well as the MNSSHP. I also LOVE the Food and Wine Festival.
I havent been in may but did a three week trip end of october-mid november a couple years back.
Hands down the best trip ive had to orlando. Weathers fantastic, more suitable for us brits. Crowds are minimal, everywhere is dresses up for halloween (mnsshp is awesome for children and adults) and if you stay into november like i did you can catch all the christmas attractions too.
And the epcot food and wine festival is a definite must do!
In terms of price i remember looking and comparing it may and it worked out about the same.

I've never been able to go in October due to school holidays but it would be my choice just for food and wine. Just been this last May and it was much hotter than I expected, I've had cooler August's (!) but I also really enjoyed it. Much less rain than August. Less humid. Tolerable crowds.
They are both nice times of the year to go and it was nice to see MK decked out in its Halloween colours. The Food and Wine festival at Epcot is great. MNSSHP is fab just for the opportunity of being able to dress in costume for the night!
...but I also love the Flower and Garden festival at Epcot, longer park hours and the great weather in May. Crowds on our last trips in May and October were on par with each other, I didn't think that October was particularly lighter in crowd levels.

Oh yes forgot about the Flower and Garden festival at Epcot. That really is truly beautiful. We managed to just get that again a few years back when we went in Feb/March.
When we went in the May though we did think it was much busier then the October time we went.
Really the only time I would NEVER EVER go again, not even if I won the holiday, would be July/August..We hated every single second of that. But I'd go any other time of the year.

My Sister is at WDW now, having chosen this time of year to fit around School holidays, so I will be interested to hear how she has found crowd levels etc. She has previously been a few times in both May and October.
