May I trouble you for some much needed help?

Hi all, and thanks for having me!
I am in the beginning stages of planning a trip to Walt Disney World in a few months, YAY! I am going with my husband and 5 year old son, both of whom have never been to the World. I myself was last there in 1998, so obviously things have changed.....

I have a few things set up for our week, but am scratching my head over which park to go to when, I really need some itinerary help here.
We are going August 27--September 2, staying at Port Orleans Riverside. Here is what I have set up so far, ready?

*Brunch at Chef Mickey's at 2 PM August 27
*50's Prime Time Cafe 11:30 lunch August 28
*Pirate excursion for my little boy at 9:30 leaving from the Yacht Club on August 30 (it's roughly 2 hours)
*Sci-Fi Dine In Theater lunch (but maybe just getting desserts, upon what I'm hearing about the food), 11:10 on August 31
*Breakfast at Crystal Palace 10:00 on September 1

I'm happy with all of these, I was just wondering (and reaching out to you wonderful people) how to plan our days around them. I will be travelling with two of the biggest Star Wars fans EVER, they cannot wait to see Hollywood Studios, and my little boy wants to do the Jedi Training Academy.

Animal Kingdom was under construction the last time I was here, so I've never seen that park. Magic Kingdom is definitely my favorite park (and I don't feel like waiting around until Friday of that week to see it again, I would REALLY love to fit it in twice somehow---I'd love to be there for opening one morning)

We DO have Park Hopper tickets, which hopefully will come in handy. I'd also love to take them to Disney Springs via boat, which we can do from the Riverside. We are not doing the Dining Plan, just FYI.
Can anyone out there please help me work on which park to do which day/that kind of thing? I would dearly love you for the rest of my life---it just seems like this week will fly by.

You have some good kid-friendly choices here! I usually check the EMH schedule to decide which park to visit. We generally try to go to MK the day after a late EMH and plan to hit one or two morning EMH before heading out for break/naps and then hopping to another park. With a little one it might be a good idea to plan a resort day and relax by the pool :)
 
Oh thank you SO much for your reply!! It's all slightly overhwhelming--in a good, fun way, of course!--attempting to plan the days. I LOVE Disney and especially the Magic Kingdom, and would love to see it at least twice.....again, thanks so much for the advice, I love it!!!!!!!
