Awhile back there was some talk of making a recipe book. Here's my contribution--it's not nearly as fancy as Noel's squid recipes

, but it's really good and very versitile.
No-Sugar Banana Bran Muffins
3-4 mashed bananas (black ones!)
1 egg
1/4 cup oil
3 tbl. milk
1 cup All-bran cereal
1 cup flour (white or wheat)
1 & 1/2 tsp. baking powder
1/2 tsp. baking soda
cinnamon or other spice(s) to your liking
Mix bananas, egg, oil, milk and cereal together and let it sit for awhile to soften.
Mix together dry ingred. and add to wet ingred., barely mixing until combined.
Spray muffin pan w/cooking spray.
Bake at 350 for 15-18 min.
Makes about 1 doz. muffins
NOW the fun part: You can add almost anything to this.
- I've added some yogurt to the wet ingred.--makes the muffins very moist.
- I've added chopped apple, blueberries, raisins, chopped nuts, wheat germ, oatmeal (not all at the same time
)
- I've made them in mini muffin pans for kids--adults like them this way too, of course.
They're a little bit sweet, just right for breakfast and snacks IMHO.
If you try other variations, let us know!
PS If I have bananas that are almost black I just put them in the freezer (skins still on--I don't even put them in a container or baggie) and save them up until I have enough (or to have on hand for cooking). They look awful but when thawed they're just fine for baking.
