Matzo Ball Soup Question

My parent's church (Methodist) is having a Sadr soon. They are serving traditional foods, but it will not necessarily be kosher. One of the items is Matzo Ball Soup which is being made from scratch. My Mom is making the soup but she is confused by some of the different recipes. Some call for the soup to be prepared and eaten immediately when done cooking. Others state that the matzo balls can be prepared in advance (1 or 2 days tops).

The question being - if the matzos are prepared in advance (ie - the day before) can they sit in the broth for all that time? Will the matzos "hold up" so to speak. Some of the recipes are not clear. This is first time their church is doing this and she would hate to mess up the soup because she didn't prepare it right.

My MIL is the matza ball queen! She makes the matza balls in advance but only drops them in the soup towards the end to heat them through.
 
I am the offical Matzo Ball soup maker in my family..

I make the broth ahead of time but the matzo balls a few hours before.. not balls yet just the matzo ball stuff.. then make them into balls as I am putting in the soup..You can make it ahead of time and let it sit in the broth in the frig.. but the balls will not be a light and fuffy as when they are first made. We have even frozen them for later on and they were good just more like Matzo rocks then matzo balls

the balls do get mushy and fall apart if in the broth too long. It doesn't take that long to make. I'd make it same day I would eat itb
 

We generally make the balls in advance, put them in the fridge (in a covered bowl) until we are ready to make the broth and then cook them. If you are making everything in advance I would say keep the broth and the matzo balls in separate bowls until you are ready to cook it all.
 
I'm seriously jonesing for some Matzoh Ball soup now! The best places to get it always had a pan of the matzoh balls next to the broth and just dropped them into the bowl, then ladled the soup on top.

Tip from my MIL - she always makes her matzoh balls ahead of time and stores them in the refrigerator in a styrofoam egg carton, so they are protected and don't break. She even has frozen them that way. (This also works great for regular meatballs - you can unfreeze only as many as you need)
