Mashed potato casserole recipe???

I'm looking for a good recipe to make for Thanksgiving....anyone have one and willing to share???
 
Make mine plain mashed taters please!!! I gotta have somewhere to put my peas and gravy!!!! :)
 

Hmmmmm.....that sounds yummy, but I'm already hearing all the "WHAT'S THIS", "WHERE ARE MY PLAIN 'OLE MASHED POTATOES" at Christmas dinner. I'm hosting this year and my whole family, including my brother who is returning next month from a year long tour overseas and he hasn't been "home" (meaning here with his family) for Christmas in 5 or 6 years. I may have to stick with traditional just for him!
 
I don't know if this is a casserole but I make these frequently:

5 lbs potatoes
16 oz sour cream
16 oz cream cheese
one bunch green onions, finely chopped

Mash the potatoes as normal (with milk), mix in the sour cream, cream cheese and onions. You can either put them in the fridge overnight (which I do for Thanksgiving, etc) or put in the oven to heat and serve. If I put them in the fridge overnight I make them on the soupy side so they don't dry out-cover with foil. Depending on the pan I warm them up for 30-45 minutes at 350.
 
Not really a recipe but this is how we do it

6 boiled idaho potatoes - peal and mash after soft- put back in a hot pan to get all the water out

saute 3 chopped scallions in a stick of butter-

mash that all together- add 3 packages of Farmer cheese(the kind with the salt)
Add salt and pepper to taste

Then bake for about an hour- or however long you have at whatever temp your oven is at. That's why I like this one it's very forgiving

But Foodnetwork magazine has a little booklet inside it this month with about 50 different ways to make mashed potatoes(bacon cheddar ones sound yummy!)
 
Probably wouldn't want it for Thanksgiving necessarily, but recently I made a mashed potato casserole that was like the papas we love at Abuelo's, a Mexican restaurant we like.

I cut and cooked 8 Yukon Gold potatoes, skins on, and then mashed well. I added finely chopped onion, a small can of diced jalapenos, some butter, sour cream, salt, pepper and garlic powder. I mixed well, put it in a greased casserole dish and topped it with shredded colby jack and baked until hot and bubbly. It was so good!
 
If you are looking for traditional, but do-ahead, just make your regular mashed and put them in a crockpot on warm (spray the crockpot with nonstick spray first and stir them occasionally)...I did this last year for Christmas and it was so much easier, plus I could mash my potatoes at 9 am and then not worry about them! Good luck!

I tried this for our Cmas dinner and it was sooooooo nice not to be mashing potatoes right before we ate and when everyone was at my house. I made my regular mashed potatoes in the AM, put them in the fridge and then about 3 hours before we were going to eat, I put them on on low in the crock (with a few pats of butter on top and I put plastic wrap between the crock and the lid (I read that tip online, something about keeping the condensation from dripping into the taters and making them mushy). I just stirred the occassionaly and they were soooooo good when we ate dinner. YUM!!!!!!! I will never make mashed potatoes at the last minute (for a crowd) again!
