Mashed cauliflower recipe??

Does anyone have a good mashed cauliflower recipe , they would care to share?? I recently had it for the first time and it was just like mashed potatoes without all the carbs!!!
 
We make it just like we do mashed potatoes. Just replace the potatoes with cauliflower. You just have to mash the cauliflower and drain it real well before mixing because it will be too watery if not.
 
Here's a recipe we love. . .

Cauliflower, Bacon, & Cheddar Casserole

1 head cauliflower, about 4 c.
4 strips bacon
2 green onions
1/2 c. sour cream
1/4 stick butter
1 clove garlic, minced
8 oz. cheddar cheese, divided
salt and white pepper, to taste

Cut up the cauliflower and steam/boil until soft. While the cauliflower is cooking, cut the bacon up into small pieces and fry. Then chop the onion up fairly fine, including the green portion.

When the cauliflower is soft, drain well. (I let it set in a colander for an hour, and then pressed additional liquid out of it.) Add the butter and sour cream. Use a mixer to mash the cauliflower until creamy. Add the bacon bits, green onion, garlic, salt, pepper, and half of grated cheddar. Mix well and pour into large casserole dish. Top with remaining 1/2 cup of cheese.

Bake at 350°F for 20-30 min, or until top begins to brown.

Note: When boiling the cauliflower, add several cloves of peeled garlic, it helps take away some of the 'cabbagy' flavor... which gets mashed in with the cauliflower when whipped. You can also added a bit of xanthum gum to the cauliflower to stiffen them a bit more.
 
Oh, this sounds good! I've heard about mashed cauliflower, but had not yet tried it. I'll buy some cauliflower next time I go to the grocery store. Thanks for sharing!

You can get xanthum gum at GNC and health food stores, and my Kroger has even started carrying it in their new low carb section. It's just a small bottle, but you don't need much. A little goes a long way.

I did a cauliflower pesto once. I liked it but no one else did! :confused3
I cooked the cauliflower till is was very tender. Then mashed it added a little olive oil, garlic and some other Italian spices. Then tossed it with pasta and served it with spicey sausage. I added a little red pepper at the end to give it a little more kick! I thought it was pretty good. I think I may have tossed in some carrots for color, can't remember.....
 
I always get this as my side at Ruby Tuesday's, I love it. No one else in my family will eat it so there's no use in me making it, but I'm gonna hang on to that recipe just in case.
