We LOVE sweet potato fries. Sometimes I take sweet potatoes and and an equal amount of Idaho's and peel them, slice them in thick (think steak) fries, Pam a baking sheet, spread them out, drizzle or spray a little olive oil on the pieces, sprinkle with salt/pepper and bake til tender. It's a nice presentation with the two type of potatoes mixed together.
I don't know. I have made sweet potatoe fries with and without the skins. I have had them at restaurants and from the frozen food section with or without the skins too. Just like regular potatoes. I guess it's just a personal preference thing.
