We have a stay at AKV and SSR this coming February. We aren't sure yet if we will be cancelling or not. We also don't know if we will be doing a resort stay or doing two park days. We have APs in our MDE account, but we definitely don't want to activate them on this trip. I went in to make park reservations today just in case we do decide to do two park days, but it looks like if I make them, I will have to use our APs. Is this true? If we decided last minute to buy tickets, is there a way to keep the reservations without cancelling and rebooking?

You do not activate your AP until you first use it at WDW. Nevertheless, with the voucher for the AP you currently have in your MDE account, you are permitted to make any needed park reservations for a future trip that you have reserved. Doing so does not constitute activation of the AP. Moreover, if you have made reservations with the AP voucher but later buy regular tickets for the same days, your park reservations simply transfer to those tickets if you choose to use them instead of the AP.

Right. I understand that. What I'm asking is if I make park reservations (using the AP voucher) and then buy 2-day park tickets to use on the trip, if I could keep those park reservations or if I would have to cancel the park reservations and rebook them. When I went to make reservations today, I had to choose between making them using park tickets or an annual pass. I had to choose annual pass since I haven't bought the 2-day tickets yet. But if we decide to do park days, will I have to cancel those reservations and rebook using the new tickets?

As long as you are a resort guest, it should not matter if you change up the tickets later.

I will say that the system is wonky (or maybe wonkier than usual) during this transition. We have Gold APs, activated in March when we renewed. We have an offsite November trip coming up for which I made park pass reservations months ago. I decided to make some changes today, so I logged into the MDE website and tried to cancel the first reservation I don't want. I wasn't allowed to cancel but instead had to start as if I were booking park pass reservations de novo. Went through the process for that day and for the other days I was changing. After each reservation was made, I was able to look at my reservations overall, and the only ones showing were the new ones I had just made. However, when I finished and looked at My Plans in MDE again, both reservations were showing for the days I changed! I logged out for some time, then logged back in, and they're still there, on the website as well as the app. I even tried to cancel the extra ones, and it wouldn't let me!

Oh well! I imagine the extras will drop off some day - hopefully the ones I don't want!
