We are having family visit from out of town and I am looking for some new recipes that I might beable to make ahead for breakfast and dinner. We have a gas grill and I have two crockpots so those are possibilities. I will be feeding about 10 people-one is a vegetarian.

Here is my favorite muffin recipe:

The “Berry Best” Muffins

1 cup butter 1 cup milk
2 cups sugar 4 tsp. baking powder
2 tsp. vanilla 1 tsp. salt
4 cups flour
4-5 ½ cups fresh or frozen blueberries,
blackberries, raspberries or cranberries*
*If using frozen fruit, partially thaw and combine
with ¼ cup flour. Fresh berries should be rinsed,
drained and well dusted with flour, before
folding into batter.

Cream butter and sugar in large mixing bowl. Add eggs
(one at a time) and vanilla. Blend thoroughly. Combine
flour, baking powder and salt. Alternately add flour mixture
and milk to the first mixture. (The batter will be very thick.)
Blend well. Fold in berries. Grease muffin tins. (Because
batter will need to expand over the rim it is best to grease or
oil muffin tin beyond rims of cups. You may use paper liners,
But top of tin should still be oiled to allow for overage.)
So that the muffins will take on a mushroom shape, heap
batter above rim of muffin tins. This will produce a
Beautiful shape. Sprinkle generously with sugar and bake in
preheated 425-degree oven for 10 minutes. After 10 minutes
of baking, turn oven temperature down to 375 degrees and
bake an additional 15 minutes until muffins are done in center
and a rich golden brown on top.

This keeps very well in the freezer and is good to keep on hand. I served one that I think had beeni n the freezer for almost a year and got rave reviews.

Pepper, celery salt, soy sauce
4-6 boneless, skinless chicken breasts
1 can cream of chicken soup
1 pint sour cream
shredded Monterrey Jack Cheese

Sprinkle chicken with pepperl, celery salt, and soy sauce. I used quite a bit of soy sauce. I think it helps to have the chicken kind of marinate in the soy sauce.

Mix soup and sour cream and pour over chicken breasts in baking dish. cover with cheese. Bake at 325 for 2 hours uncovered.

I froze mine uncooked.

My sister is a vegetarian and what I usually do for meals when I am serving a meat entree is to make sure that I have several side dishes - vegetables, starch, bread, salad that she can make a meal of those.

I can't help with the vegetarian -
But something that is so easy to make is sausage gravy - I make it the night before - then put it in fridge - In the AM, I stick it in the crock-pot on HIGH - serve with biscuits - Done -

If you need a recipe for it, let me know -

i'd like the recipe for sausage gravy please!

Sausage Gravy -

Buy bulk sausage (you know, in the tubes) -
Do not buy the non or low fat kind - It will not work -

Cook sausage in a saucepan
Take Sausage out, but leave the drippings
Add 3 tblspn of flour and mix with the drippings -
Once it is completely mixed, add 3 cups milk
Stir till it is mixed and then add sausage back in -
Salt and pepper to taste

It may seem not to be "gravy" That is why I make it the night
before - I put it in the fridge -
Then in the AM - Stick in the crockpot on "high" and it will be ready in about 1 hour (you could always nuke it too)

It is so easy and I always get so many compliments on it -
