I use lots of those little Gladware things as DD doesn't do sandwiches.
The closest she gets to a sandwich is a breadless one of ham, cheese and lettuce, or chicken meat, cheese, lettuce with a tortilla on the side.
Her favorite thing this year is a mexican food bowl.
1 can of whole pinto beans, 1/2 drained
pinch of salt
1/2 TBSP olive oil
pinch of garlic powder
cook everything together until beans soften up a little, then mash it all up with a potato masher, and stir. (Much yummier than canned refried beans)
I usally top it with shredded cheese, lettuce or cilantro, tomatoes, black olives and sour cream. DD just want a spoon to eat this. My DS also likes this, but with tortilla chips on the side to dip into.
For those with kids who will eat sanwiches...even if you slip some sliced strawberries into that sandwich with strawberry jam is yummy. Cream cheese and jelly w/fruit is a yummy alternative to peanut butter.
