We are doing WDW in June. We are staying for 7 days, but there will be a one or two days in there where we will do other things besides the Disney theme parks.

Can I buy a 5 day MYW with Park Hopper, and NOT use it five days in a row? Does that make sense? Basically, I want to use it on Sat, Sun, Mon, then Wednesday and Thursday. Can I skip Tuesday and still have it be valid as long as I use it within the 14 day expiration period?
 
You most definitely can do this without any problem...you are correct in your thinking. If you are VERY set in your plans I would go with the 5 day park hopper but the difference in cost is SOOO minimal that I would get the 7 day park hopper and have extra flexibility with...I think for an adult the difference would only be $6.00. We like to be flexible on vacation and that's what we would differently but each one is different so either way would work...
 
Sure you can. That's what the 14-day window is all about.

When you use the ticket for the first time, the 14-day expiration countdown begins. You then have 14 days in which to use the rest of your ticket, so if it were a 5-day ticket, you'd be able to space out those 5 days however you want - use a day, skip 3, use another day, skip 5, use two in a row, whatever you want.

As long as you use all 5 days within the 14 day period, you're fine. After 14 days, any days that you haven't used will expire.

Tommygirl is right, however; if you pay the advance price, the difference in cost between a 5-day ticket and a 7-day ticket is only $2 (5-day $249.21 vs. 7-day $251.34). At the gate, the difference is $5 (5-day $254.54 vs 7-day $259.86). The extra couple of bucks is so insignificant that it's definitely worth getting the extra 2 days, even if you wind up not using them.
