Magic Bands and FP+ Ins and Outs help

Okay, long time WDW afficianado and DVC owner. We've gone yearly for a long time. We were just going on a cruise this year but decided to plan a couple days at WDW on each side of the cruise using some points relatively last minute, for me, 2 months out.

I have been signing up for the FP+ times and have customized the Magic bands. Now HELP!
1. Picking the FP ahead of time I didn't care for...will we be able to get more or are we stuck with three rides a day and long waits for the rest of the time? Are we doomed to no Soarin' this year because we picked Test Track?

2. I thought we were supposed to be able to pick parade spots? Show times? Am I confused?

3. Booking dining last minute stinks. Period. I thought we booked BOG last year for lunch. Didn't see that option today for my day and all dinner is no seating.

Any encouragement or help anyone can give me is appreciated. Thanks~
