Macaroni and Potato Salad

Do you have a tried and true macaroni and potato salad recipe? If so I would love to hear how you make it. I have done a few web searches and have tons on recipes, but I really want recipes that people have tried and really enjoy.

I just use a basic recipe for both. Potato: Finely chopped onions, chopped pickles, mayo and mustard, salt/pepper, finely chopped boiled eggs and diced softly boiled potatoes. I sprinkle the top with paprika (actually, that's my dd's favorite job:) ). Sometimes I slice boiled eggs and place on top before we put paprika on them. I don't like celery or celery seeds.:eek: Macaroni salad: Finely chopped onions, chopped pickles, mayo, salt/pepper, finely chopped boiled eggs and softly boiled elbow macaroni.
 

Pickles give it a crunch and a wang, Uncle Tony.:) My ds loves to eat his own version of macaroni salad-chopped pickles, mayo and macaroni. The more pickles the better.:)

Oh, and vidalia onions are the best for both recipes.:)
 
I'd stay away from eggs in potato/macaroni salad recipees. The pickes make a zippy addition, and for a real change, try a pasta salad instead. Rotelli (spiral pasta), frozen veggies (broccoli, carrots and cauliflower), garbanzo beans (chick peas), black olives, parmasean cheese, and bottles italian dressing (grilled chicken can be added as well to make a complete meal) is my families favorite recipee. Its a good way to sneak some meat and veggies in on the fussy little ones :D

I don't measure much of anything when I cook, but this is what I do.

Potato Salad
Boil a couple eggs with the potatoes. (For some reason this is REALLY important to the taste!) Dice both. Mix with diced celery & dressing. The dressing is Miracle Whip, celery salt or powder, vinegar, sugar, mustard, parsley . . .

Macaroni Salad
To the macaroni I add either chopped pickle or just use India relish, shredded carrot, chopped egg, chopped celery & celery seed. The dressing is similar to the potato salad, but I use more mustard in this one.

With either, I always make the dressing separately & taste it before I combine with the rest.

When I make macaroni salad, I use whatever macaroni appeals to me at the moment (shells, spirals, etc.) and add mayo, green olives, and fresh veggies--broccoli, celery, onion, tomato, carrots, radishes. It tastes good and looks good with so many colors from the veggies. :D

I agree.:)

The Sweetness, I do make a version without the eggs for my mom sometimes.:) Although the mayo has eggs in it.:)
 
Macaroni Salad

2 boxes of elbows, cooked, drained and cooled

Add in 1 bag(the ones you buy frozen, but used defrosted) of chopped onions and 1 bag of chopped peppers.

Chop 1 jar of sweet gherkins pickles(I dont like pickles, but these are good), and add in.

Add mayonaise and the pickle juice, until moist. If you are storing this over night, add more mayo and pickle juice before serving.
 
I ususally just wing it on my macaroni salad. I use salad dressing (usually Italian, ranch, or Ken's Creamy Paramisan). I add some parmesian cheese, garlic, and whatever else hits my fancy the day I'm making it. Sometimes I put croutons or pepperoni in it. Sometimes I put feta cheese in it. People always rave about my pasta salad, and I just do whatever I feel like when I'm making it.

Macaroni salad and potato salad? PUBLIX! :teeth: And I put dill relish (just tiny minced pickles) in my tuna salad. Can't eat tuna without it!
 
Just out of curiosity - does anyone mix potatoes and macaroni in their salad? This is the way it was served when we were in Hawaii and I'd never seen it that way before.
 
Macaroni Salad

Pasta
Red or orange pepper(chopped coarsely)
Peas
Sour Cream
Maonnaise
Sweet relish
Cheddar cheese

Cook pasta, add sour cream and mayo till the amount of pasta you cooked is well covered. Mix in peppers, peas, cheddar cheese, sweet relish. Salt and pepper to taste. After it sita a while, it generally needs to have more mayonnaise and sour cream added.

Eggs
Mayonnaise

Peel potatoes. Boil them until cooked, not toosoft. Hard boil eggs. Slice them. Mix eggs and potatoes together with mayonnaise. Salt and pepper to taste. Once it sits a while, you'll need to add more mayo.

I wanted to ask that question earlier but I figured people would think I was weird or something! :D I spent eight years of my childhood in Hawaii and another four stationed there through the military. Hawaiian-style "potato-mac" salad is yummy! :teeth:
